Instructions

  1. 1

Heat oil in a large wok over high heat until smoking. Add crab pieces and stir-fry 4-5 minutes until shells are bright red. Remove and set aside.

  2. 2

Reduce heat to medium. Add garlic, ginger, and chilies. Stir-fry until fragrant, about 1 minute.

  3. 3

Add shaoxing wine to deglaze, then soy sauce, oyster sauce, sugar, and chicken stock.

  4. 4

Return crab to the wok. Toss to coat with sauce. Cover and cook 3-4 minutes.

  5. 5

Uncover, add green onions and cornstarch slurry. Toss until sauce thickens and coats the crab.

  6. 6

Transfer to a platter and garnish with cilantro. Serve with steamed rice and finger bowls.

Chef's Tips

  • This is meant to be eaten with your hands—provide plenty of napkins and finger bowls.
  • Adjust the chilies to your heat preference.
  • Mantou (steamed buns) are perfect for soaking up the sauce.
